Makes 3-1/2 dozen cookies.1/2 cup Butter Flavor Crisco all-vegetable shortening or 1/2 Butter Flavor Crisco stick plus additional for greasing 1 jar (12 ounces) Jif Creamy Peanut Butter 1 cup granulated sugar 1 cup firmly packed brown sugar 3 eggs 3/4 teaspoon vanilla 3/4 teaspoon maple syrup (or maple-blend) 2 teaspoons baking soda 4 -1/2 cups quick oats, uncooked, divided 1 package (8 ounces) candy-coated chocolate pieces Heat oven to 350ºF. Grease baking sheet with shortening. Place sheets of foil on countertop for cooling cookies. Combine peanut butter, granulated sugar, brown sugar and 1/2 cup shortening in large bowl. Beat at medium speed with electric mixer until well blended and fluffy. Add eggs, vanilla and maple syrup. Beat at high speed 3 to 4 minutes. Add baking soda and 2-1/4 cups oats. Shape dough into 1-1/2-inch balls. Flatten slightly. Place 2 inches apart on prepared baking sheet. Bake for 9 to 10 minutes for chewy cookies or 11 to 12 minutes for crispy cookies. Cool 2 minutes. Remove cookies to foil to cool completely. |
