Makes One 9-inch Pie 8 Servings9 Classic CRISCO Double Crust 6 cups sliced, peeled Rambo or Granny Smith s, (about 2 pounds or 4 large) apple 1/2 to 1 cup , to taste firmly packed brown sugar 2 tablespoons quick-cooking tapioca 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 2 tablespoons , melted butter or margarine 1 tablespoon juice lemon 1 teaspoon vanilla 1 egg 3 to 4 tablespoons milk 1 teaspoon granulated sugar For crust, prepare (see Classic Crisco Pie Crust recipe) and pressbottom crust into 9-inch pie plate. Do not bake. Heat oven to 400ºF. For filling, combine apples, brown sugar, tapioca, cinnamon andnutmeg in large bowl. Toss well to coat. Add butter, lemon juice and vanilla.Toss well to coat. Spoon into unbaked pie crust. Moisten pastry edge withwater. Cover pie with top crust. Cut slits or designs in top crust toallow steam to escape. For glaze, combine egg and milk in small bowl. Brush on top crust.Sprinkle with granulated sugar. Bake at 400ºF for 10 minutes. REDUCE OVEN TEMPERATURE TO 350ºF. Bake for 40 minutes or until filling in center isbubbly and crust is golden brown. Cool until barely warm or to roomtemperature before serving. |
