| COLONIAL APPLE CAKE |

Makes one cake2-3/4 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon cinnamon 3/4 teaspoon salt 1/2 teaspoon baking soda 1-3/4 cup granulated sugar 1-1/4 cups CRISCO Oil 2 eggs 1/4 cup milk 1 teaspoon vanilla 2 cups chopped, peeled apples 1/2 cup chopped dates 1 teaspoon grated lemon peel 1 or 2 tablespoons confectioners sugar Whipped cream for garnish, if desired Heat oven to 350ºF. Grease and flour 12-cup Bundt pan. Combine flour, baking powder, cinnamon, salt and baking soda in medium bowl. Combine granulated sugar, Crisco Oil, eggs, milk and vanilla in large bowl. Beat at medium speed of electric mixer until blended. Scrape bowl constantly. Add flour mixture. Beat at medium speed for 2 minutes. Scrape bowl frequently. Stir in apples, dates and lemon peel. Pour into pan. Bake at 350ºF for 1 hour to 1 hour 15 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes. Turn out onto serving plate. Cool slightly. Sift confectioners sugar over cake. Serve warm. Top with whipped cream, if desired. |
