8 servingsCrust: 1/3 cup Butter Flavor CRISCO all-vegetable shortening or 1/3 Butter Flavor CRISCO Stick, melted 1-1/3 cups crushed chocolate wafers Filling: 3/4 cup Butter Flavor Crisco - all-vegetable shortening or 3/4 Butter Flavor Crisco stick 1-1/2 cups confectioners' sugar 3 squares (1 ounce each) unsweetened chocolate, melted 3 eggs 1 teaspoon peppermint extract 1 teaspoon vanilla Topping: 2 cups prepared whipped topping 1/2 cup chopped maraschino cherries, drained Preheat oven to 350ºF. For crust, combine melted Butter Flavor Crisco and crushed wafers. Press into 10 x 6-inch baking dish. Bake at 350ºF for 5 minutes. Cool on vivre rack. For filling, in medium mixing bowl cream Butter Flavor Crisco and confectioners' sugar. Blend in melted chocolate. Add eggs, peppermint extract and vanilla. Beat at medium speed of electric mixer until blended. Spread evenly over cooled crust. Set aside. For topping, in small mixing bowl combine whipped topping and cherries. Spread evenly over chocolate layer. Freeze for at least 2 hours, or until firm. Cut into 8 pieces. Garnish with shaved chocolate, if desired. |
