| CHOCOLATE CUPCAKES |

Makes 20 medium cupcakes1/3 cup CRISCO Shortening or 1/3 CRISCO Stick 1 cup sugar 1 egg 1 egg yolk 1 teaspoon vanilla extract 2 ounces (2 squares) unsweetened chocolate, melted 1-2/3 cups sifted cake flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup milk Preheat oven to 350ºF. Cream shortening and sugar until light and fluffy in a large mixer bowl. Add egg, egg yolk, and vanilla extract; beat thoroughly. Blend in melted chocolate. Combine cake flour, baking powder, and salt. Add dry ingredients alternately to creamed mixture, beating until smooth after each addition. Fill paper-lined muffin cups about half full. Bake at 350ºF for 20 to 25 minutes. Cool on racks. If desired, frost with Easy Milk Chocolate Frosting . |
