| CHOCOLATE CHIP BARS |

Makes 2 dozen1/2 cup CRISCO all-vegetable shortening or 1/2 CRISCO Stick 1/4 cup sugar 1/4 cup packed brown sugar 1 egg yolk 1/2 cup all-purpose flour 1/4 teaspoon baking powder 1/4 teaspoon salt 1 package (6 ounces) semisweet chocolate pieces (1 cup) 1/2 cup chopped pecans Meringue: 1 egg white 1/4 cup packed brown sugar Preheat oven to 325ºF. Cream Crisco and sugars in a mixer bowl. Beat in egg yolk. Combine flour, baking powder, and salt. Add to creamed mixture and beat until blended. Spread in an ungreased 8 x 8 x 2-inch glass baking dish. Bake at 325ºF for 20 minutes. Remove from oven. Sprinkle chocolate pieces and nuts over top. For Meringue, beat egg white to stiff, not dry, peaks. Add brown sugar gradually while beating. Spread meringue carefully over mixture in baking dish. Bake at 325ºF for 10 minutes or until meringue is golden brown. Cool before cutting into bars. |
