Makes One 13 x 9 x 2-inch Cake 12 to 16 ServingsCake 2 -1/4 cups all-purpose flour 2 cups granulated sugar 1 tablespoon plus 1-1/2 teaspoons instant espresso coffee granules 1 -1/2 teaspoons ground cinnamon 1 -1/2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 cup water 3/4 cup plus 1 tablespoon dairy sour cream 1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO Stick 1 teaspoon vanilla extract 2 eggs 4 squares (1 ounce each) unsweetened baking chocolate, melted Frosting 2 packages (3 ounces each) cream cheese, softened 3/4 cup Butter Flavor CRISCO all-vegetable shortening or 3/4 Butter Flavor CRISCO Stick 4 -1/2 cups confectioners' sugar 1/4 cup milk 1 tablespoon plus 1-1/2 teaspoons instant espresso coffee granules 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 4 squares (1 ounce each) unsweetened baking chocolate, melted Heat oven to 350ºF. Grease 13 x 9 x 2-inch baking dish with Butter Flavor Crisco all-vegetable shortening. Line bottom with waxed paper. Grease waxed paper. For cake, combine flour, granulated sugar, 1 tablespoon plus 1-1/2 teaspoons coffee granules, 1-1/2 teaspoons cinnamon, baking powder, baking soda and salt in large bowl. Add water, sour cream, 1/4 cup Crisco Shortening and 1 teaspoon vanilla. Beat at low speed of electric mixer 1 minute. Add eggs and 4 squares melted chocolate. Beat at medium speed 2 minutes. Pour into dish. Bake at 350ºF for 25 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before removing from dish. Invert cake on wire rack. Remove waxed paper. Cool completely. Place cake on serving tray. For frosting, beat cream cheese and Butter Flavor Crisco in large bowl at low speed until blended. Add confectioners' sugar, milk, 1 tablespoon plus 1-1/2 teaspoons coffee granules, 1 teaspoon cinnamon and 1 teaspoon vanilla. Beat until blended. Add 4 squares melted chocolate. Beat at high speed 2 minutes. Frost top and sides of cake. Refrigerate leftover frosting. Serve immediately or refrigerate until serving time. Refrigerate leftovers. |
