BLUEBERRY MAPLE SQUARES Print E-mail

Topping
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons CRISCO all-vegetable shortening or 2 tablespoons CRISCO Stick
1/4 cup chopped nuts
Batter
2 cups all-purpose flour
2/3 cup sugar
1 tablespoon baking powder
2 eggs
2/3 cup milk
1/2 cup CRISCO all-vegetable shortening or 1/2 CRISCO Stick, melted
1-1/2 teaspoons maple flavor
1-1/2 cups fresh or dry-pack frozen blueberries


Preheat oven to 350ºF.
For Topping, combine brown sugar, flour, cinnamon, and salt in a bowl. Cut in Crisco with a pastry blender or 2 knives. Stir in nuts.
For Batter, combine flour, sugar, baking powder, and salt in a bowl.
Beat eggs, milk, Crisco, and flavor with a fork. Add to dry ingredients and stir only until dry ingredients are moistened. Rinse and drain blueberries and fold in carefully.
Spread batter in a greased 9 x 9 x 2-inch pan. Sprinkle Topping evenly over batter.
Bake at 350ºF for 45 to 50 minutes or until a toothpick inserted in center comes out clean. Cut into squares. Serve warm with butter pats and honey.
