BLACKBERRY ICE CREAM PIE Print E-mail
Makes One 9-inch Pie
8 Servings

Crust
9-inch Classic CRISCO Single Crust
Filling
1 package (3 ounces) peach or berry flavor gelatin (not sugar-free)
1 cup boiling water
1 pint vanilla ice cream, softened
1 -3/4 cups fresh or frozen dry pack blackberries, partially thawed


For crust, prepare and bake (see Classic Crisco Pie Crust recipe). Cool.
For filling, combine gelatin and water in large bowl. Stir until dissolved. Cut ice cream into small chunks. Add to gelatin mixture, a spoonful at a time. Blend with wire whisk after each addition.
Dry blackberries between paper towels. Fold into gelatin mixture. Spoon into cooled baked pie crust. Refrigerate or freeze several hours before serving.
