BANANA OATMEAL COOKIES WITH BANANA FROSTING Print E-mail
Makes about 5 Dozen Cookies

Cookie
3/4 cup Butter Flavor Crisco - all-vegetable shortening or 3/4 Butter Flavor Crisco stick
1 cup firmly packed brown sugar
1 egg
1 cup mashed ripe bananas (2 to 3 medium)
1 -1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1 -3/4 cups quick oats (not instant or old fashioned)
1/2 cup coarsely chopped walnuts
Banana Frosting (optional)
2 tablespoons Butter Flavor CRISCO Stick or 2 tablespoons Butter Flavor CRISCO all-vegetable shortening
1/4 cup mashed ripe banana
1 teaspoon juice lemon
2 cups powdered sugar
Finely chopped walnuts (optional)


Heat oven to 350ºF. Grease baking sheet with Butter Flavor Crisco.
For cookie, combine Butter Flavor Crisco and sugar in large bowl. Beat at medium speed of eletric mixer until well blended. Beat in egg. Add mashed banana. Beat until blended.
Combine flour, salt, cinnamon, baking soda and nutmeg. Mix into creamed mixture at low speed until blended. Stir in oats and nuts with spoon.
Drop 2 level measuring tablespoonfuls of dough into a mound 2 inches apart onto baking sheet. Repeat for each cookie.
Bake at 350ºF for 15 to 17 minutes, or until set. Cool 1 minute on baking sheet. Remove to cooling rack. Cool completely.
For frosting, combine Butter Flavor Crisco, banana and lemon juice in medium bowl. Beat at medium speed of electric mixer until well blended. Add powdered sugar 1 cup at a time. Beat at low speed after each addition until blended. Frost cooled cookies. Sprinkle with nuts.
