BANANA FRITTERS (KLU AY TOD) Print E-mail
Makes 4 to 6 servings

2 cups self-rising flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1-1/2 cups water
2 large eggs, slightly beaten
4 large bananas, slightly underripe
Crisco Pure Canola Oil
1/4 cup honey


Combine flour, sugar, baking powder, and salt in a large bowl. Whisk in water until mixture is smooth. Whisk in eggs; mix well.
Cut bananas into 1-inch pieces. Place in batter; stir gently to coat pieces thoroughly. Pour oil about 1-1/4 inch deep into large skillet. Heat over medium-high heat until hot. Do not allow to smoke. Add battered banana pieces, keeping them separated. Cook on one side until golden; turn pieces and cook until other side is golden. Continue to cook pieces, turning often, until light brown and crisp. Remove and drain on paper towels.
Place on large serving platter; drizzle with honey. Serve warm and with vanilla ice cream, if desired.
