| APPLESAUCE LEMON PIE |

One 9-inch pieCrisco pastry for a double-crust pie 1-1/2 cups unsweetened applesauce 3/4 cup packed brown sugar 4 eggs, slightly beaten 1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick 3 tablespoons lemon juice 1 teaspoon grated lemon peel 3/4 teaspoon salt 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cinnamon Line a 9-inch pie plate with pastry; set aside. Preheat oven to 450ºF. Combine applesauce, brown sugar, eggs, Crisco, lemon juice, lemon peel, sell, nutmeg, and cinnamon; mix well. Pour filling into the unbaked pie shell. Bake at 450ºF for 16 minutes; reduce heat to 3000. Continue baking for 45 to 55 minutes or until a knife inserted in filling halfway between center end edge comes out clean. Coal thoroughly on a rack before cutting. |
