Makes about 3 Dozen Bars2 medium Granny Smith or other firm, tart cooking apples, peeled, cored, and finely chopped 2 -1/2 cups all-purpose flour, divided 3/4 cup Butter Flavor Crisco - all-vegetable shortening or 3/4 Butter Flavor Crisco stick 1 cup firmly packed light brown sugar 2 eggs 2 tablespoons vanilla extract 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup finely chopped pecans 1/2 cup finely chopped dates Confectioners' sugar Heat oven to 350ºF. Grease 15 x 10 x 1-inch jelly roll pan with Butter Flavor Crisco. Toss apples with 1/4 cup flour. Place Butter Flavor Crisco and brown sugar in large bowl. Beat at medium speed of electric mixer until well blended. Beat in eggs and vanilla. Combine remaining 2-1/4 cups flour, baking powder and salt. Add gradually to creamed mixture at low speed. Beat until well blended. Fold in apple mixture, nuts and dates. Spread in greased pan. Bake at 350ºF for 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely. Cut into bars about 2-1/2 x 1-1/2 inches. Serve immediately or refrigerate. Dust with confectioners sugar just before serving. |
