APPLE BROWN BETTY CREPES Print E-mail
6-8 servings
Prep time: 10 minutes
Cook time: 30 minutes

1 recipe Crepes
6 cups thinly sliced apples
2/3 cup firmly packed brown sugar
1/3 cup water
2 tablespoons honey
2 teaspoons lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 tablespoons flour
1 tablespoon granulated sugar
1 cup chopped walnuts
2 tablespoons butter or margarine
CRISCO No-Stick Cooking Spray

Topping:

1/2 cup graham cracker crumbs
1 tablespoon packed brown sugar
1 tablespoon CRISCO Vegetable Oil


Prepare Crepes as directed. Set aside.

Mix apples, brown sugar, water, honey, lemon juice, cinnamon, salt and nutmeg in medium saucepan; heat to boiling. Reduce heat to medium. Cover. Cook, stirring occasionally, about 10 minutes, or until apples are tender. Mix flour and granulated sugar in small bowl. Stir into apple mixture. Cook, stirring constantly, 1 to 2 minutes longer, or until mixture thickens. Remove from heat. Add walnuts and butter, stirring until butter melts.

Preheat oven to 400ºF. Spray a 13 x 9-inch baking pan with Crisco No Stick Cooking Spray. Spread about 2 tablespoons filling down center of each crepe. Fold opposite edges of crepe over apple mixture. Arrange crepes in prepared pan. Spread remaining apple mixture over crepes. For topping, mix all ingredients in small bowl. Sprinkle over crepes. Bake 10 minutes, or until hot. Top with whipped cream, if desired.
