| BALSAMIC YOGURT CUCUMBER SALAD |

Makes 4 to 6 servings1 cup plain yogurt 3-4 cloves finely minced garlic 2 tablespoons Crisco Pure Canola Oil 1 tablespoon balsamic vinegar 1 teaspoon salt 1/2 teaspoon black pepper 2 cucumbers, peeled, seeded, and cut into 1/2-inch pieces 1/4 cup torn fresh mint or basil leaves In a large bowl, combine all of the ingredients except the cucumbers and mint leaves and whisk to combine well. Refrigerate until ready to serve. This can be made up to 2 days in advance. To serve, whisk the mixture. Add the cucumbers and mint or basil leaves. Stir to combine well. Enjoy! |
