| TOP-O-THE-MORNING OAT BRAN MUFFINS |

Makes 1 dozen1-3/4 cups oat bran high fiber hot cereal 1/2 cup all-purpose flour 1/4 cup firmly packed brown sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 cup skim milk 1 egg white 1/4 cup honey 1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick, melted Heat oven to 425ºF. Line 12 medium (about 2-1/2 inch) muffin cups with paper or foil liners. Combine dry cereal, flour, brown sugar, baking powder and salt. Set aside. Beat milk, egg white and honey in large bowl at high speed of electric mixer until blended. Stir in Crisco. Add dry ingredients. Stir with spoon until dry ingredients are moistened. Fill muffin cups about two-thirds full. Bake at 425ºF for 16 to 19 minutes or until golden brown. |
