STRAWBERRY BREAD Print E-mail
Makes one loaf

1 cup unsweetened individually quick frozen strawberries
1 teaspoon sugar
1-2/3 cups all-purpose flour
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, slightly beaten
2/3 cup CRISCO Oil
3/4 teaspoon vanilla
1/4 teaspoon strawberry extract* (optional)


Heat oven to 350ºF. Grease and flour 9 x 5 x 3 inch loaf pan.
Combine strawberries and 1 teaspoon sugar in small bowl. Thaw strawberries completely. Drain and discard liquid. Cut each berry into fourths.
Combine flour, 1 cup sugar, cinnamon, baking soda and salt in medium bowl. Mix well.
Combine eggs and Crisco Oil in small bowl. Add vanilla and strawberry extract, if used. Add strawberries. Mix well. Add to flour mixture. Stir until well moistened. Spread in pan.
Bake at 350ºF for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes in pan. Remove from pan to cooling rack. Cool completely before slicing.

*Increase vanilla to 1 teaspoon if strawberry extract is omtted.
