| QUICK PANCAKES |

Eight 4-inch pancakes2/3 cup milk 1 egg, beaten 1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick, melted 1 cup all-purpose flour 1/2 cup sifted confectioners' sugar 2 teaspoons baking powder 1/4 teaspoon salt CRISCO Shortening or CRISCO Stick for brushing Mix milk, egg, and Crisco. Combine flour, confectioners' sugar, baking powder, and salt; add to milk mixture and stir until dry ingredients are just moistened. Heat a griddle or skillet and brush with Crisco. For each pancake, pour about 3 tablespoons batter onto griddle. Cook until bubbles appear evenly over top. Turn over and brown second side. |
