Makes 12 medium muffins2 cups sifted all-purpose flour 3 teaspoons double-acting baking powder 1 teaspoon salt 2 tablespoons sugar 1 cup milk 1 egg 3 tablespoons CRISCO all-vegetable shortening or 3 tablespoons CRISCO Stick, melted Mix flour, baking powder, salt and sugar in a bowl. Combine milk with slightly beaten egg and melted Crisco. Stir liquid and dry ingredients together lightly until just moistened. Rub muffin pans with Crisco and fill 2/3 full. Bake at 400ºF 20 to 25 minutes. *Muffins can be made by cutting the Crisco into the dry ingredients without melting before adding liquid ingredients. |
