Makes 12 muffins2-1/2 cups Homemade Crisco Quick Bread Mix 3 tablespoons sugar 1 tablespoon grated orange peel 1 egg 1/2 cup milk 1/4 cup orange juice 3/4 cup fresh or dry-pack frozen blueberries Preheat oven to 400ºF. Combine Crisco mix, sugar, and orange peel in a bowl. Beat egg, milk, and orange juice together with a fork. Add to bowl; stir only until dry ingredients are moistened. Rinse and drain blueberries and fold in carefully. Spoon batter into 12 greased medium-size muffin cups. Bake at 400ºF for 20 minutes or until lightly browned. |
