| APPLE WALNUT CAKE |

Makes a 13 x 9-inch cakeCake: 4 cups coarsely chopped peeled apples 2 cups sugar 2 eggs 1/2 cup CRISCO Oil 2 teaspoons vanilla 2 cups sifted all-purpose enriched flour 2 teaspoons baking soda 1 teaspoon salt 2 teaspoons cinnamon 1/2 cup chopped walnuts Lemon Glaze: 1 cup confectioners' sugar 1-1/2 tablespoons lemon juice 1/2 teaspoon vanilla 1 tablespoon corn syrup For cake, preheat oven to 350ºF. Combine apples and sugar; set aside. In a large mixing bowl, beat eggs slightly. Add Crisco Oil and vanilla. Beat one minute at medium speed. Add combined dry ingredients alternately with apple mixture. Stir in walnuts. Pour batter into greased and floured 13 x 9 x 2-inch pans. Bake at 350ºF for 45-50 minutes, until cake tests done with a toothpick. When cool, cover top of cake with Lemon Glaze. For glaze, blend all ingredients until smooth in a small bowl. Drizzle over cooled Apple Walnut Cake. |
