DOUBLE CHEESE SOUFFLE Print E-mail
Prep time: 20 minutes
Bake time: 25-30 minutes
4 servings

1/3 cup Butter Flavor CRISCO
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1-1/2 cups milk
1 cup shredded Colby or Cheddar cheese
2 tablespoons grated Parmesan cheese
4 eggs, separated


Preheat oven to 375ºF. Grease 1-1/2-quart soufflé dish or casserole. Set aside.
In 2-quart saucepan melt Butter flavor Crisco. Remove from heat. Stir in flour, salt and cayenne pepper. Blend in milk. Cook and stir over medium heat until mixture thickens. Stir in Colby and Parmesan cheese until smooth. Remove from heat and set aside. In small mixing bowl beat egg yolks at high speed of electric mixer until thick and lemon colored. Blend yolks into thickened mixture. Set aside.
Clean beaters thoroughly. In large mixing bowl beat egg whites at high speed until stiff but not dry. Fold thickened mixture into beaten egg whites. Pour into prepared dish. Bake at 375ºF for 25 to 30 minutes or until golden brown and knife inserted in center comes out clean. Serve immediately.
